I'd agree on the subject of languages. It's a bit too much imo. Even here in Europe where each country pretty much speaks a different language, it's not so common to find girls who speak 3 of them fluently, let alone in the US.

You were too available imo. I'd stop texting her for a while, perhaps 2 weeks or even more. That's pretty much the only way it has worked for me with low-interest gals. However, if you haven't made a strong first impression, disappearing won't do much, but that's the only option I see so far.
