Once you are over 35, ask yourself this question: What do you; a 35+ year old man have to offer a mid 20's or younger girl.. that someone her own age cannot? True. If you have money, status etc... you do have some leverage, but for the status quo 35+ man, the odds dwindle with age.
Opportunities can still occur, but for the avg 35+ man, they will not be as frequent.
If a 35+ man is to attract and retain a 18-25 year old woman, it is typically going to be based upon money. Looks still matter for the 35+ man, but money is the major differentiator. An average/above average looking 18-25 year old can get a physically fit boyfriend close to her own age. If she's going to go 10+ years older, the guy is going to have to offer something she can't get with men close to her own age. Men in their 20s typically can't offer money whereas the 35+ man can offer money and money/status to the 18-25 year old woman.
This is why it does not get better for men with age. Unless a man has a substantial amount of money, he will be relegated to pursuing women close to his own age in his 30s/40s/50s. After around ages 30-35, money becomes a bigger part of the SMV equation for men.
Rollo's SMV chart by age that shows men peak around 36-40 isn't true for the majority of 36-40 year old men. There's a small segment of 36-40 year olds who can make Rollo's SMV chart by age a reality. The typical 36-40 year old man is a pussie beggar for mediocre to subpar women close to his own age. That doesn't sound like peak to me.
Since the typical guy is only able to get women near his own age,
the real peak for men is 25-30. At 25-30, a man is older than some women but not too old for the best options in the marketplace.
I'd also say how young the woman is a huge factor. A guy that is 35-40 going for women that are 27-32 really isn't all that ridiculous to be honest, especially if he was in shape, did well for himself, etc. However, at 35-40 it would be ridiculous to expect to pull 18-22 lol, these women are barely out of high school and you should have nothing in common with them.
While it is easier for men to get a 5-9 year age gap than a 10+ year age gap, getting a 5-9 year age gap is an achievement that requires a man to be above average. The typical man will get an age gap of less than 5 years. A 30 year old man with a 27 year old woman is better than a 45 year old man with a 42 year old woman.
At 37 myself, I'm looking to settle down. I am no longer interested in the 18-25 years old range. I have my life in order and I think I can get a 27-32 year old girl to marry and this ,I think, is realistic .
I think that your plan is highly likely to lead into an unhappy marriage and eventually a divorce.
Think about it, the typical single woman in your desired age range (27-32) has already had a few failed relationships and carries the baggage and mileage that comes with that. If she couldn't stay together with a guy for 1,2,3 years, why do you think she's going to go the distance (decades) with you?

In a Western nation like the United States, the most realistic option for the typical 37 year old man is a 33-37 year old woman. That's who he can attract and retain. That doesn't mean he should marry her, it means he can get a non-marital girlfriend from that age range.
At 37, getting a 27-32 year old woman is more realistic than an 18-25 year old woman. At 37, even 27-32 requires a man to be above average. 27-32 might be better for non-marital girlfriend and not putting a ring on it based upon what
@pipeman84 describes. That would be true in the United States but might not be as true in Romania, a more traditionalist Eastern European nation.
