Submission wrestling came from BJJ/JJ? Are you kidding me? Submission wrestling existed in Ancient Greece... a LONG time before JJ was even created.
Everyone crosstrains these days, they need to (as I said before). However, Sak is not primarily as BJJ guy as Matt Serra or BJ Penn or Murilo...
Sak does submission wrestling which has been around far longer than BJJ. He is not a BJJ guy by any means. Submissions do not equal BJJ.

Even though Sak was the Gracie Hunter, BJJ is what spawned Vale Tudo and MMA in modern times (it all dates back to Pankration in ancient Greece... 648 B.C. if I remember correctly). It has evolved a lot since then, to include cross-training which has made straight BJJ pretty much obsolete...
