I understand that people think of French fries, chips, and the like when talking about potatoes, but some people consider it on the bad side of food. Why is that? Ever since potatoes became known to the Europeans, their population flourished. And Irish people tend to be strong as hell and their ancestors pretty much lived off of potatoes. I think most people don't eat the skin so maybe that's why (it's supposed to be very rich in nutrients or something). I thought they were especially more preferred since they're a starch so they don't spike your insulin or something.
