If it's a first date, just go get some coffee somewhere or get some drinks (if you are old enough).
I've been doing that for a long time now, and it's become my pick-and-roll. It's low pressure. It's not time-consuming. And it's pretty easy to build a rapport and talk openly in that situation.
As far as first dates go, don't plan out anything elaborate or try to impress. I had a friend recently spend all day cooking this girl food for their first date. And when it got to be dinner time, she didn't show up and turned her phone off. I didn't have the heart to tell him this, but doing something like he did is a sure-fire way to get a flake.
If you're talking second or third date kind of activities, comedy clubs are always fun if you have one in your area. I don't know what it is, but it always seems to help build a rapport. It's probably all the laughter and the jokes.
