Vegetables

I know we're supposed to eat a lot of vegetables, but I hardly eat any. They are just so plain, and don't appeal to me at all. The only vegetable I really like at all is corn, but I know corn is ****. Any ideas on how I can add more vegetables to my diet?

Add them to the foods you eat, dont just eat them plain
You can grill them, they add a unique flavor
Eat them in a soup

Lemon+Salt+Veggies = awesome

Put fat on them. Fat + seasoning = flavor. The best part is that fats are good for you.

Suggested fats:
- egg yolks
- olive oil
- unsalted real butter
- the juice from cooked meats (e.g. stir-fry, stew)

How about cooking vegetables? I don't like vegetables much either but you'd be surprised how good they taste when you throw them in the pan with chicken and olive oil.

Try this - put a little olive oil in a pan. Cut up some onions, green peppers, cherry tomatoes, and asparagus. Throw some salt and pepper in there and cook it all until the onions are nice and crispy and the peppers are starting to get some crispy burn marks going on. Throw it over chicken marinated in italian dressing and you won't be disappointed.

Yes! I have a salad every day. I add feta cheese, avocado and try a leafy mix (rocket, baby spinach ect) instead of lettuce also.

I'm not big on vegetables either but I take a supplement called "Greens". They provide me with the nutrients of vegetable without actually having to eat them. It works for me.

One I don't see mentioned a lot is soup...easy to make, transportable, very nutritious etc.

greens is crap, it's mostly grains.

supplements & V8 won't get you what you need, bottom line.

it's a good idea to eat both raw (ie salad) and cooked veggies. raw veggies have enzymes & other stuff that heat destroys, while cooking releases many micronutrients in veggies.

prefer fresh over frozen, and frozen over canned. if you cook frozen, try not to add water (ignore the directions) -- put a little oil or butter on the bottom of the pan and stir them just enough to keep stuff on the bottom from burning. adding liquid that you'll drain off later just drains away nutrients. the canning process brutally destroys stuff, and the varieties of veggies that stand up well to being canned are generally the least nutritious varieties.

that makes it sound difficult, but with a few rules of thumb, it's not.

I've used that stuff (super greens or mega greens). It worked but it was expensive as all hell...

Here is a recipe that I find makes the veggies taste awesome:

Get a few sticks of asparagus and chop up some okra
Douse it all in one tablespoon of olive oil
Sprinkle garlic powder over the veggies
Grill them. I use a George Foreman grill, which seems to work well for me.

This meal has a lot of fiber, as well as a good amount of healthy fat.
