I love to cook. This is one of my favorites (recipe for 4 people, so divide accordingly)
Tuna Steaks with horseradish sauce
2 pounds tuna steaks 1 - 2 inches thick (seafood dep't at grocery store)
3 Tbsp. sliced almonds (buy a bag where they sell the cookie and cake mixes and freeze what you don't use - they will keep forever for future use this way)
1/4 cup all purpose flour
1 tsp minced garlic (you can buy jars of chopped garlic and this will keep it simple for you and save time) You will find the jars in the produce department by the onions and fresh garlic, most likely.
I Tbspn dried basil
I Tbspn dried thyme
I Tbspn dried rosemary (the spices will cost some bucks up front, but you are going to "Don Juan" some lucky girl with your great culinary skills, so you'll need them for other "dishes" - pun intended - later, right?
)
I tspn ground pepper
2 Tbspn water
2 Tbspn white wine (optional)
Horseradish sauce
Rinse and trim the tuna steaks
In a bowl (or food processor if you have one) mix the almonds, etc into a paste. Spread the paste on both sides of the tuna - refridgerate if you are doing early prep work (same day cooking though). Do not let the fish sit out at room temperature raw for long... or else continue cooking...
Heat a non-stick skillet over medium until hot and cook the steaks 3 to 5 minutes until done. Horse radish sauce Makes one cup
2/3 cup light mayonnaise
1 1/2 tablespoon horseradish (I like the Harley davidson brand, but any wiill work)
1 1/2 other spicy mustard (like Grey Popon). This can be made ahead of time.
What is so great about this is that it makes a wonderful dinner, and the leftovers are fabulous cold in a pita bread sandwhich, added to a salad, etc.
