hmm.. i very much agree with what jake said, thats the same impression that i am getting from you.
anyways, these are the generalizations that i picked up from my experiences.. which are pretty much limited to the groups that i have any experienced, as a chinese myself.
mainland chinese: hard working in school (which doesnt determine anything about performance). usually sticks with a small group of friends. polite if you try to pick them up, but can act cold or frigid. not proactive. fashion sense and attitude varies.. those from southern provinces often copy HK fashions. doesnt go to sing K/clubbing as much as HKs. less make up use than others. more serious about relationships.
HK chinese: divided into 2 groups. first group works hard in school and studies to get good marks, doesnt go out as much. second group doesnt study much except at necessary times, and stays out late at night (emulating HK night lifestyle). often goes to sing K, club, pool, etc. usually has a larger network of friends/acquaintences than other groups. also usually sticks with other HK chinese, as well as southern provinces mainlanders. huge focus on appearance, both in makeup in clothes/accesory branding. makeup tends to be more "balanced" than a/cbcs. has a large spectrum of personalities though.
ABC/CBC (america/canada born): either doesnt hold concern for history/tradition or recently discovered roots and doesnt truly understand the traditions. some are very friendly and energetic, and less inhibited than both mainland + HK chinese. some are also very *****y. throws tempers more often. same activities as HK chinese, but without singing K. speaks english. unfashionable (but revealing) clothing. often overuses makeup. fun, but not for long term relations. often has non-chinese friends.
korean/japanese: sticks to korean/japanese, just like chinese stick with chinese. if you hit on them, they might be receptive, but i rarely see any real relationship work out with these (not myself nor friends).
