I think a man starts to concern himself with a woman's notch count if he's considering moving in with her or getting legally married to her. It would make sense at that time to be more concerned about that.

I also don't care about how long it takes to get laid in an interaction. I've never had to wait longer than 3 dates to get laid. I have had a lot of "one date, no sex, no second date" type interactions and they were unpleasant. Most of the time, it was because the woman chose not to extend the interaction. As time went on, I started to get more selective about who I offered second dates to.
