I'm sure you guys have had that one plate that is, in your mind, a cut above the rest. My question is, if you see your not making the progress you would like, should you next, put her on the back burner, or just continue trying to game as if you have nothing to lose and can only gain knowledge from it? What do you guys think is best?

I think you need to provide more information for people to be able to give better advice. Such as: why are you not making the progress you would like?

Also, there is nothing wrong with having that "one plate" that's better than others, that's a good thing. That means you've (possibly) found a decent woman. But make sure to have more to keep yourself in check.

I think plate theory is not working for you. By definition you shouldn't be feeling like this. You might as well be dating 1 person.

You proceed with plates the same way you would with a stock portfolio. A certain stock may seem like dynamite but then it consistently underperforms. At a certain point you just have to cut your losses and move on. Same deal here.

If it ain't working, it ain't working and there's no point in fretting over it. Sometimes, it's not going to work out with a girl no matter how well you play it. See if you make any progress with this girl. If you do, then great. But at a certain point, it's time to hit the next button.
