Next time, get her number. She is very obviously interested or she wouldn't be asking you questions as well as her talking to you first.

I thought she might not be interested since she said no to the coffee.

Stop thinking so much...get outside of your head. She said no to coffee because of work. Don't attach extra meaning to stuff women say and stop assuming the worst.
