This is why you dont ask a specific day. You find out when shes free then make definite plans.
In your situation though, just counteroffer. Say "im busy that day...what day are you free next week"

Understandable, makes for better flexibility and shouldn't be a issue of indecision. Some of the advice out there is too rigid when trying to lead and set up a specific time. At least there is a level of interest worth pursuing when given a specific counter offer.

I used to say let's do drinks Thursday because it was "more alpha". Now I say "let's do drinks this week after work. What days are you free?"
If she wants to go, it's not like saying it one way will make her want to go more than the other. On the other hand, if she's busy Thursday you're screwed. My new way allows her to say "well I'm free Tuesday - does that work?" and if it does I say yes. Otherwise, I can say "no but I'm free Wed, Thurs does that work for you?"
