How to deal with a girl who knows shes pretty?

Anyhow, this girl has stated that she knows shes pretty, and there are multiple guys chasing after her.

I remember when I found out that the girl I went "steady" with in high school thought she was pretty (she was). It was a bit of a turn off for me, honestly. But she explained to me how she was insecure about everything else - that her looks were the one thing she was happy with. I thought that made sense, and seemed like a uniquely female way of looking at things.

I typically only seek LTR material in women so when I see someone's online profile starting with "I am a fun, attractive, blah blah blah", or "I am a beautiful, sexy, blah blah blah" - I run the other way. That is a major red flag for me towards the road of Self-Entitlement as in a lot of damaged women think all men exists to serve their needs. If a woman is attractive and beautiful IN MY EYES, then that's all that is required - she don't need to tell the world or prove it; that is a certain EVIDENCE of poor self-esteem and insecurity.

An attractive & modest woman who shuts up about her own looks makes me give her another extra .5 points on the scale for just being beautiful in her own way.

First, if you've known her all your life and haven't had sex, it's 99% unlikely to happen.

How do you guys deal with and keep the attraction going with a girl who knows shes very pretty and can get any guy she wanted?

By letting them do almost all of the texting/initiating, and by declining 2/3 of their offers. But just when they think you are out with another girl, drop them one line of poetry (or something). When you're doing it right she'll say things like "always keeping me confused".
