You cook it.

The fat will pool in the skillet or pan, and you pour it into an old container and pitch it. I usually poor it on my dogs food, they don't have the same LDL receptors, so it doesn't harm him and he loves it.

If you're really ambitious, you can can also let the meet cool on some pieces of folder up paper towel, where whatever fat is left will be absorbed into it.

FYI- don't dump it down your sink.

the fat in beef is solid at room temperature so when the liquid fat cools down, it'll go back to the solid phase...and it might still be in your pipes when it does this..can lead to blockages
