Olympia by competing at 285 lbs and he's 5'11". That's 285 lbs in contest shape which means less than 5 % bodyfat. If you're 6' 200 lbs you got ways to go before you can resemble Coleman.
You're right, you'll be bigger than Men's Health cover model, but who the hell wants to look like those guys anyway ? If you're 6' 215 lbs LEAN you'll probably have a physique more like Colts running back Edgerrin James. And I've seen amateur natural bodybuilders compete at as heavy as 230 lbs - without steroids, and they looked great. And trust me - they can wear jeans, I don't really know where that comment about sweatpants came from.
And there are pro bodybuilders who have pleasing physiques as well.Look up Dexter Jackson - competes at 5'6" 230 is a prime example.
If you want to look a guy on cover of Men's Health that's fine - it's up to you, to each his own. Most guys I know though want to be bigger than that.
