Depends what kind of underground you're looking for, theres everything from Jedi Mind Tricks and Outerspace to Atmosphere or even Mf Doom. There is A LOT of underground out there and its hard to narrow down "good music" for you if you don't give us something to base our ideas off of.

Wutang Clan - 36 Chambers, their first album, maybe counts as mainstreeam but don't care :D

NWA - Straight Outta Compton, great pioneering rap album.

Tribe Called Quest, their 88-93 stuff, anything really, some good tracks, non-gangster-rap-rap.

By good, i pretty much meant not mainstream. Atmosphere, Immortal Technique, Brother Ali, Deltron 3000...stuff like that, AND some people that YOU like.

Yeah, many groups from the late 80's and early 90's. Ice-T, 2 Live Crew, Kool Moe D and LL Cool J.

To be honest hip hop aint what it use to be, IMO.
Forget a song, get the classic albums. The best song of 06 was:
Nas feat. Jay-Z- Black Republicans. (Godfather 2 sample!)

I would highly recommend:

Nas-Illmatic
Wu Tang Clan-Enter the 36 Chambers,Wu Tang Forever
Biggie-Ready to Die, Life After Death
Raekwon-Only Built for the Cuban Linx
GZA-Liquid Swords
Jay-Z-Reasonable Doubt,The Blueprint
Big Pun-Capital Punishment
Big L-Lifestyles of the Poor and Dangerous
EPMD-Strictly Business, Business Never Personal
Kool G Rap and DJ Polo-Road to Riches, Wanted: Dead or Alive, Live and Let Die
Eric B and Rakim-Paid in Full, Follow the Leader, Let the Rhythm Hit 'Em, Dont Sweat the Technique.
Mobb Deep- The Infamous
Boogie Down Productions-Criminal Minded
KRS ONE-Return of the Boom Bap
Gangstarr-Daily Operation, Moment of Truth
Big Daddy Kane-Long Live the Kane
Biz Markie-Goin Off
RUN DMC-RUN DMC, Raising Hell
Ghostface Killah-Supreme Clientele, Ironman
The Fat Boys- greatest hits
Snoop Doggy Dogg-Doggystyle
Dr. Dre-The Chronic
A Tribe Called Quest-Low End Theory, Midnight Mauraders
2PAC-Me Against the World
2PAC/Makaveli-Don Killumanti-The 7-Day Theory
Main Source-Breaking Atoms
Public Enemy-It Takes a Nation of Millions To Hold Us Back
Beastie Boys-Licensed to Ill
Ultramagnetic MC's-Critical Beatdown
Common-Resurrection
Redman-Whut? Thee Album
Black Star-Mos Def and Talib Kweli are Black Star
DITC- self titled
Beatnuts-Stone Crazy
Jeru the Damaja-The Sun Rises in the East

There is crap in "underground" and on the mainstream.
For underground, I like Thirstin Howl the 3rd, and J-zone. Alot of underground hip hop seems pretty nerdy.

DITC. Diggin in The Crates Crew, is one of the greatest hip hop groups ever. The are IMO, kings of the underground. Nobody can compare the talents of these mc's and producers. DITC is: Showbiz, AG, Big L ( R.I.P. ), Buckwild, Diamond D, Fat Joe, O.C., Lord Finesse

Hip Hop all starts with the song " Planet Rock".....
