Hmm...that is a good idea also...have read the pancakes freeze well too, so I guess it depends on what you prefer.Using berries sounds like they would also taste awesome. While I haven't tried, I'm sure these could be easily converted to muffins as well (which are also freezable).
Another healthy option is Overnight Oats. I saw these as a staple of bodybuilders for years and finally tried them about a year ago. Super easy and you could make 4-5 days worth and they store in the fridge well. I like to use Fage 5% Greek yogurt (one small container) + the oats and protein powder.
Haven't tried overnight oats but my daughter loves making them.
Wish I could use Greek yogurt but unless I want to be bloated and gain a pound or two the next day from inflammatory water weight, I gotta stay away...
Concentrated dairy is a no go for me.
