Group fitness classes are often a part of big box type gyms like LA Fitness and 24 Hour Fitness. Those big box gyms offer a combination of general fitness equipment and group classes. Big box gyms do tend to offer multiple fitness classes formats (yoga, Pilates, interval training type classes, etc.). It's a part of membership at these gyms.
There are also standalone fitness studio concepts that usually offer 1-2 types of classes and they do them really well. They either sell monthly memberships or short term class packages. Big name brands that are examples of this concept would be Title Boxing and SoulCycle.

You are correct, 75% of these classes were women and I did get some dates out of it.
Every class format will be between 65-80% women. Your approximation that they were 75% women is right in line with what I would expect out of group fitness classes. The ratios are great but women's lack of sociability before/after classes is what makes fitness classes a lackluster way to arrange dates and find a girlfriend.
You went to class 3 times a week for 6 years. If you went to class during 50 weeks of the year for those 6 years (allowing for 2 weeks of vacation), you went to 900 classes. You mention dates with 2 women from them. It's possible the number is higher. The number might also be slightly higher if you adjusted for being in a bigger city like Dallas, Houston, Atlanta, or Denver. Fitness classes are also 45-60 minutes.
If you went to a bar 900 times during a Happy Hour-ish type time frame (5-8 PM weekdays, better time for first date arranging than late night. Late night is better for same night sex.), it is likely that you would have arranged more first dates.
900, 1 hour daygame sessions in most traditional daygame venues are likely to have resulted in more first dates, especially if you picked some good daygame venues in a bigger city.
There's a reason that those YouTube content creators rated fitness classes as F tier. The bigger benefit of fitness classes is physique, and physique might help in nightlife venue approaching or other daygame venues.
One was a woman from Bulgaria who was about a 7 and about 10 years younger. However, I did not want to get involved with a woman from Eastern Europe (green card stereotype) so I only went out with her once or twice and nothing happened.
When I was 41, I went out with (4x) a 21-year-old who I met in class. She was average to cute, but her youth made her very hot to a man my age. However, the age difference messed with my head and it ended after a month.

You might have gotten sex from the 2nd woman that you went out with 4 times.

There was a guy I used to talk to that was big into country bar dancing
I remember a few times going to country bars with him and a few guys. He was actually very skilled at country dancing, quite impressive to me to be honest. He was an average looking white guy and in pretty good shape. He was never able to pull at a country bar and a few times made some comments about how the women just go there to dance and that many of them were already in relationships, etc. One girl that was a regular was a lesbian lol. Not impossible and there is a chance that it could have been more to do with the metro itself and not country bar dancing exactly.
If a man is skilled at dancing, he can usually find dates and sexual partners in a dance venue. This is common for both salsa dancing venues and country western dancing venues.
It is unfortunate that guy you knew didn't pull at that specific country bar.
