Kinda Crazy Situation with Female Coworker - Not sure how to handle

From the way it came off when I read it, it didn't seem like a hard rejection. She said she wanted to get some sleep instead of joining you in whatever u had planned already. I wouldn't take that personally, sometimes people are actually tired. It doesn't mean she's not interested at all

And it's not like you tried to actually plan something ahead of time with her, you asked her in the spur of the moment to join you in something you already had planned that same day. There's a difference
Ive always thought that if a girl wanted you she would make time. I generally only do stuff spur of the moment - almost never plan.

Given the sheer amount of text in the OP you seem to have a case of Oneitis. We have all been there but it generally isn't a good thing. Add into the fact that this chick clearly is not seriously interested when she turned down your invite and you are wasting your time thinking about her. She sees you as an orbiter. Add into the additional fact that this is a co-worker and you should never "sh1t where you eat" and the clear cut answer here is "onto the next."

No oneitis. Was just trying to provide enough info for the full picture. Not sure how I got to orbiter when she initiates all convo and i often barely respond but... Possible.

Update: At this point I am fairly convinced this girl genuinely likes me, and that all these other things were designed to get me jealous. Pretty sure she had no interest in that dude who was in our room for a bit.

So, just the other day somehow this prior question about "what if something happened and we hated each other?" came up.

Me: "What would have to happen for you to hate me (and key my car like she jokingly alluded to before)?"
Her (looking at the ground): "you would have to break something of mine...(long pause)... like something that would cost money to replace."
(To-myself): With the pause, I couldn't help but think she was referring to breaking her heart.

Then she asked me some question to which I responded, and finished by suggesting she ask her friends as they could provide a better answer than myself - "I'm not really the right person to provide counseling - not sure if your trying to turn me into your girlfriend."

Her: "I'm not trying to turn you into that, I'm trying to make you my...(pause)..whats it called...(pause)? - therapist or life-coach."
(To myself): "Boyfriend"
Me: "No, I'm not cut out for therapy or life-coaching (not even sure what that is). I'd need a license to be a therapist."
Her: "We're going to be in here. every. single. day. together for a looong long time. We'll get you to crack eventually. Either it will be good in a good way or a bad way, but you'll crack."
(To myself): "Who is 'we'?"
Me: "Neither."

This week she has been acting aloof and not really talking to me, but she communicates with me in non verbal ways by mimicking me: if I start humming something, right after she starts humming; if I talk to myself quietly but out loud, she immediately starts talking to her self, etc. etc. Today she said in a slightly angry tone: "I'll see you Monday."

So to everyone telling me to stabilize it... aside from requesting to move my desk, I don't know which direction is more stabilizing. Me telling her friends isn't going to work here cause she will feel rejected and girls get pissed at me all the time.
