Did observations from my point of view I would say their reactions when looking at and away from you.
I'm gaming this cute chick at a coffee shop. I talked to her before, but the next time I seen her and waved she looked at me like she didn't know me. That was last summer....she was obviously interested as she kept looking at me, and another person on the table noticed it to. Anyway..I watch how they look at other guys who walk in, as its a coffee shop a lot of different type of guys walk in. If they are interested they will look as much as they can, if they notice at the slightest hint the man notices them looking, they look away with the quickness of a cat jumping off a fence.
That Chick walked in today I noticed her, tried not to stare and make her appear on a pedestal, played it smoothly and she walked in, looked in my book and intuitively time it she look at me did a double take and I reacted and she quickly looked away rapidly lol. Mind you I struck up a convo with her last week, she responded really quick and the conversation was not awkward at all, we laughed and I cut the convo short and "let" her get back to her work

If I don't feel like I'm talking to a kum stained wall, usually a green light for me. Past that, you have to look at her body language and demeanor talking to you. If she looks open, smiling at you etc she's down to flirt. If she's open and nervous she's really hot for you and trying her best to show that, while it might be out of character for her to act like that. If she's closed off and nervous you either creeper her out or she's so into you she's just acting cold to try and play it cool.
