I had picked a girl at uni, i text her got a reply she says i’m intrigued, i text back and get left on read for a few days then she randomly sends me a picture of her and her friend and says let’s have a double date with my arab friend.

Is there enough context to determine level of interest? Should i pursue or leave her on read?

The way you overanalyze this already shows me you're going to fail here. So if you can accept that and set up and go into the date with an open mind rather than an objective, maybe you'll learn something.

Usually if I'm going on a date I'll set it up somewhere that we can grab drinks and I pick a late time. I set it up so it's already implied I want to have a night out and f*** her by the end of it. That's not going to happen if you get coffee at 11am on a Sunday, for example.

Stop that. You aren't going to learn anything acting desperate. Focus your time and energy into talking to women who are interested in you. You'll get much farther much faster.
