I see in many of your meal plans a number of you have beef/veggies as an option. Well first off I don't know how to cook much. When you guys are eating veggies is it just like canned corn or peas because thats the only thing I can think of to cook.

make a salad, best and easiest option. Doesn't need to be huge.

1) a rice cooker with a steamer attachment.
2) frozen broccoli / cauliflower

Drizzle a little bit of olive oil and salt and pepper to flavor. Delicious snack.

btw if you boil veggies don't do it too long, it sucks out all the good nutrients and vitamins you want out of them.

Someone mentioned salads, salads are an excellent choice. You can put pretty much and veg and/or fruit in them. I like to sub spinach for lettuce sometimes.

Also, you can add vegies to your sanwhiches, pretty simple.

My personal favorite

Chicken cooked with :

Red Peppers, Onions, Asparagus, and Mushrooms.

All over rice.

Side salad with romaine lettuce, cucumbers, and tomatoes.

Plenty of veggies.

Personally, I would stay away from canned. Fresh are...fresh, which is about as good as it gets...frozen are pretty good, right up there, most are flash frozen and minimally processed...the only thing is, fresh veggies are the cheapest, lb per lb. Get a wok or a large pan, heat up olive oil and throw on your veggie or veggies of choice and cook them slowly and season as you see fit, salt, pepper, garlic, etc....I would hesitate to even call this cooking! At the most this will take you 10-15 minutes and you can even make a surplus and store the rest as left-overs. Don't make a habit of canned corn.

yeh but only b/c people expect cooking to be hard. it's not, or rather, it doesn't have to be. ain't rocket science.
