Does doing only one set for each muscle do anything whatsoever in terms of atleast maintaining muscle/size? Last night, I was supposed to do my workout but I was very lazy and have been busy lately, so I just did a quick 5 minute workout.....doing one set for each muscle. I know that it prolly didn't do much, but is it better than nothing?

Technically, anything is better than nothing. But in the long run, that's not really going to do anything for you.

Sorry dude, no (sensible) short cuts in this game.

ya I can agree to that....I don't plan to make this a regular event, but every month or two i am just so tired and lazy I can't possibly bring myself to workout for 30 minutes.....

"Tired" is one thing, and quite legitimate.

"Lazy" is another, and not.

There's nothing wrong with doing one set of an exercise as long as you do it to muscular failure and you're doing enough weight to stimulate the muscle. But since you say that you were feeling lazy, you maybe didnt put the intensity into it to make the workout productive.
