I'm sure many people have busy jobs, or times where they just may want to have another snack during the day, but get tired of the same ol peanut butter, almond, apple, cottage cheese, protein shake routine.
Here is a recipe that is sure to make you turn your head and go... I've never heard of that stuff. The thing is...its all GOOD STUFF.
The recipe i'm going to list is NOT your Betty Crocker muffin recipe or anything close. There is no fruit in it, but if you wanted to make it banana, or blueberry, you could easily do it. Same with lemon, or your choice. You just have to tweak the recipe some.

Muscle Muffins
1 1/2C Wheat Germ
1/4C Soy Flour
1/4C Rice Polishings
1/8C Debittered Brewers Yeast
1tsp Baking Powder
Mix all dry ingredients in a large bowl then add the following and mix all well.
2 Eggs
1Tbsp Canola Oil
1 2/3C Water
(1 large mashed banana optional)
Oil small muffin pan, pour batter (do not over pour) into pan and bake for 45-50min at about 375 degrees. Makes about 24 small muffins I believe.
Notes: Some things you might want to consider is adding 2-3 Tbsp of sugar just so they aren’t so blah! If you don’t want the sugar, substitute a little Splenda. (Cooking kind) I ’m just warning you that they aren’t what your used too like you buy at the store. These things are HIGHLY concentrated which is not a bad thing. I also suggest the small muffin pan because again, these things are very potent and my guess is you won’t be able to down a regular muffin sized one of these unless you drown it in syrup. All of these ingredients can be purchased at Whole Foods, and will run you about $12-$14. Make sure you FREEZE any muffins you won’t be eating in the next couple of days as these are NATURAL muffins and won’t stay long if you don’t freeze them.
