Guys,

Interested to hear what sort of things you are eating for lunch. I'm taking 2 x tuna sandwiches (tin of tuna in each, wholeweat bread) with a bit of light mayo, but I'm getting so bored of it. Also a banana and an apple. Any suggestions of protein rich lunches I can make in not too much time the night before work?

you eat almost exactly what I eat for lunch(tuna sandwich)

Some other cool things to do are cook up acouple chicken breasts and vegetables in a stir fry the night before and wrap it all in tin foil in the refrigerator. Its pretty good by itself, might want some dip with the veggies though, they get pretty bland after acouple weeks of straight, dry cauliflower, brocolli, red/green peppers and snow peas.

Note: cook 2 chicken breasts because inevitably you will either eat one as soon as you cook it, or have it for breakfast! atleast thats what happens to me

Just remember a wok is your friend

Cook extra lean burgers. Takes about 25 minutes the way I make them and you get enough for 3 days.

Ground beef + mashed potatoes is even easier.

PS. 2x tins of tuna every day is a good way to get mercury poisoning.

I was just reading blurb about a new study that suggests the benifits of eating canned tuna outweigh the dangers of mercury. Anybody have any info on this?

some days I eat 4-5 cans.

My usual lunch is either a 3 scrambled egg sandwich on whole grain or a can of tuna on whole grain. If'm feeling crazy I'll bake a chicken or just boil a few pieces.

1lb of rinsed ground beef made into chilli, lowfat yogurt, 1-2 cups rice, broccoli, ketchup/bbq sauce. good eats. :up:

the science behind mercury poisoning at such low doses is still fuzzy. US gov't recommendations (for example) are very risk averse.

my favorite quickie: peanut butter on just about anything whole grain or otherwise fibrous.
