here are the tips i have.. because i have a big family (gio and 4 kids)
so this is what works at my house
if someone doesn't care for tomatoes, then just stop using chunks and leave the tomatoes for pizza and spaghetti sauce.
broccoli, cauliflower etc are better with cheese .
green beans might taste better to you if you add a little ham or bacon to them before you cook them.
corn on the cob wrapped in tinfoil with butter thrown on a grill, mmmmmmmmmmmm
carrots taste great when they are cooked with roast with all that gravy.
i have one child that prefers carrots glazed, but the rest of them seem to dig them raw.
i like cabbage when you boil it until it falls apart, but my daughter only likes it in a coleslaw because the mayonnaise hides the taste.
i have a sweet potato casserole recipe that is a crowd pleaser because it makes you think its a dessert rather than a side dish.
my family does not like spinach, so i use some raw and throw it in their salads so they are unsuspecting haha
green peppers and onions are tasty when you saute' them
i love to throw things together in a vegetable soup using v8 juice as a broth. just throw in a little noodles or rice for texture and break out the crackers and sprinkle on some cheddar cheese.
but no matter how you make the veggies, it all depends on what the entree' is. roast beef is great with carrots and green beans and potatoes but it sucks with broccoli. steak goes with lots of things but it is not going to go well with sweet potatoes.
and i'm not sure how any of you guys do things, but at my house, there is usually desert. i make the desert to bribe the others into eating what i cooked for dinner and i want them to eat the meat and the green veggie and the yellow veggie or the fruit and the bread. if you want that chocolate cake, those peanut butter cookies, that apple pie, or whatever.. well you know the drill.
perhaps you could reward yourself with some treat afterwards too.
