How should I proceed here?

I've had two 'dates' with a girl after she initiated and gave me her number. First ended at my place with a long makeout session, second I invited her over for dinner. Escalated that second time, token LMR, but she mentioned 'going slow' and did everything except PIV and seemed keen to please me. She was very affectionate and reluctant to leave the next morning.

She messaged me the next day with 'Good morning (kiss), have a good day". She has initiated texting before...I reply sporadically and only text to setup a meet, in general. I messaged her the other day with a suggestion to meetup, she replied with a joke and said "Sorry, but I'm sick." This is the first time, so I gave her the benefit of the doubt. She said 'maybe next week' when arranging the second date, but was enthusiastic and initiated texting in the lead up. Must just be a language issue.

By coincidence, the next day I happened to be at the restaurant where she works. It was busy so we couldn't chat or anything, but I know she saw me. I sent her a text that evening, just to tease, saying "Good to see you're better :p". In hindsight, not ideal, but she still replied promptly with "I saw wrong". Her English isn't great, not sure what she means or if she really understood my comment hah, but my intention is to just wait 5 days/a week and reinitiate as normal.

Is this the right course of action?

It isn't a bad one, but just to understand, she couldn't see you because she was sick but wasn't sick and was able to go into work......but you saw wrong? What did you see wrong?

Yeah, seems that way, but I only intend to keep her as a plate at best. I haven't replied, so just wait till this Sunday/next week and tell her I'm going for drinks or something similar?

Keeping her as a plate or a FB is probably best.
