I still don't understand the phenomenon that is people in clubs/bars attempting to hook up in bathrooms.

First of all, there's almost always a line of people, who will realize what you're attempting and will most likely not approve.

Secondly, there are usually pissed-off bouncers everywhere, and they almost always know what's going on - if not, someone in the bathroom line will let them know.
