We all know how freeweights are superior to machines in every way pretty much. But do those cable stands that you use for tricep pulldowns and crossovers, etc, count as freeweights, since you still have to stabalize and all?

They don't count as freeweight exercises, but there are not really freeweight alternatives for certain types of motions . Freeweight purists might argue with this, but IMO you won't be wasting time on certain cable exercises.
But there are certainly freeweight exercises that can work every muscle.

Other Examples:

Leg extension
Leg curl
Assisted pullups
Lat pulldowns
Assisted dips
